5 minute preparation (plus soaking time if required)

Serves 2-4 depending on cup size

 

Ingredients

  • 2 cups of almond milk

  • ½ cup cashews soaked for ½ hour to 8 hours depending on blender strength

  • 1 tsp vanilla extract

  • Fresh grated or ground nutmeg to taste (1/2 – 1 tsp)

  • 8 Medjool dates

  • nutmeg to grate on top

 

Method

  1. Soak cashews if required, once soft strain water off, discard water.

  2. Put all ingredients into blender jug and process until super smooth 45-60 seconds in a high powered blender.

  3. Pour into serving glasses and top with grated nutmeg. It will be slightly warm from blending and will have a wonderful rich taste.

  4. For a cold version, store in fridge before serving.
