Banana with Walnut and Maple Swirl Nice Cream
Preparation 5 minutes
Makes around 2 cups
Ingredients

2-3 Frozen Bananas
-
Splash of almond milk
-
1 tbsp nut butter (optional)

1 tbsp maple syrup

¼ cup chopped walnuts
Method

Combined frozen bananas, splash of almond milk and nut butter in a food processor or blender. Process until creamy.

Remove from machine and swirl through walnuts and maple syrup by hand. Either eat immediately or freeze for later use.
NB: If freezing – after you have frozen it and you want to eat it, let soften for at least 10 minutes before scooping out.
Tropical Mango Sorbet
Preparation 5 minutes
Makes around 2 cups
Ingredients

½ - 1 bag frozen mango

½ - 1 tsp vanilla extract

¼ - ½ cup Coconut Water

Shredded Coconut
Method

Combined all ingredients except shredded coconut. Start with ¼ cup of coconut first and then slowly add until desired consistency is achieved. Process until creamy but still frozen, should resemble soft serve texture.

Fold through shredded coconut. Either eat immediately or freeze for later use.
NB: If freezing – after you have frozen it and you want to eat it, let soften for at least 10 minutes before scooping out.
Blueberry Sorbet
Preparation 5 minutes
Makes around 1.5 – 2 cups
Ingredients

½ - 1 bag of frozen blueberries

½ tsp cinnamon
-
4 Medjool Dates (pitted)

¼ - ½ cup Coconut Water
Method

Combine all ingredients in a blender or food processor and blend until some blueberries have broken down. The end result will be bits of date and blueberries amongst more blended berries, this is a chunky sorbet.

Either eat immediately or freeze for later use.

Banana Split

Ingredients

1 Banana cut in half length ways
-
1 scoop Banana & Walnut Ice Cream

1 scoop Tropical Mango Sorbet
-
1 scoop Blueberry Sorbet
-
1 tsp. melted chocolate
-
2-3 tsps. passionfruit pulp
-
Optional: Brown Rice Cakes
Method
-
Place banana on plate or in a bowl.
-
Place the 3 scoops of ice cream and sorbet on the banana.
-
Drizzle over the melted chocolate.
-
Spoon the passionfruit pulp around the plate.
-
Optional: Place a brown rice cake broken into 4 around the plate.
-
Eat immediately!
NB: For my banana split I used a very small scoop. Because this is nearly all fruit it is very filling!
