Anytime Cookies
Preparation 10 minutes, cooking time 6-7 minutes

Ingredients

½ cup wholegrain flour
-
2 Tbsps. raw sugar
-
½ tsp baking powder
-
½ tsp linseed ground
-
½ tsp almond milk
-
1 ½ tbsp. nut butter
-
½ tsp. vanilla extract
-
¼ cup banana (1/2 a medium banana)
Method

Preheat oven to 220c (430f)

In a small bowl put ground linseed and almond milk and let sit for 5 minutes.

Put flour, sugar and baking powder into a mixing bowl.

Mash banana up with a fork.

Add banana, nut butter and vanilla extract into the small bowl with the linseed and almond milk. Stir to combine.

Spoon wet ingredients into dry and gently mix with a spoon. At this stage you will not think you have enough liquid, but don’t add any! Now mix with your hands bringing all the ingredients together until it forms cookie dough.

Roll out between two sheets of baking paper. Cut into circles or desired shapes.

Put on baking paper in a tray and bake in a fan forced oven for 6-7 minutes. Watch them carefully as they can over cook very quickly!

Remove from oven and let cool in tray for 10 minutes before moving them to a cooling rack.

Eat them anytime!
Lemon Cashew Cream
5 minute preparation, 2 minute cooking (allow time for soaking)
Ingredients

1 Cup raw cashes soaked for 2 – 8 hours depending on blender

3/4 Cup water
-
Zest of 1 lemon
-
Juice of one lemon
-
2 Tbsp. Panella (or granulated sugar of your choice)

Pinch of Celtic sea salt
-
1 tsp Vanilla extract
Method

Blend all ingredients together until smooth.

Place mixture into a saucepan and whisk over low heat until it thickens, shouldn’t take long at all.

Place in piping bag and cool in fridge
Date Caramel
5 minutes preparation
Ingredients
-
12 Dates
-
1/3-1/2 cup water
-
Splash Vanilla extract
-
Pinch of salt
Method
-
Put all ingredients into the blender and blend. Gradually add more water to get the desired consistency.

Store in fridge.
Putting it all together
Extra ingredient
-
12 thin slices of banana
Method
-
Pipe lemon cashew cream in a circle leaving space in the middle
-
Pour date caramel in the middle
-
Place on top a slice of banana
-
Top with second cookie and repeat for a second layer
-
You should have three cookies with two layers of cream, caramel and banana. On the very top pipe a little bit of cream in the middle and top with another banana slice at an angle

Eat as is or serve with extra date caramel!
