Super Green Gravy
(Plus Perfect Oil Free Roast Potatoes)

Super Green Gravy
Makes 1-2 Cups

Ingredients

1 small onion or shallot

1 clove of garlic
-
2 button mushrooms (optional)
-
6-8 Greens of choice (spinach & silverbeat)

1 Tsp. Veggie stock
-
Celtic Sea Salt & Pepper to taste

1 Tsp. Dried Mixed Herbs

2-3 Tsps. Tapioca Starch

Water
Method

Over medium heat dry fry onion, garlic and mushrooms, if using them, for 2-3 minutes. If the ingredients start to stick either add a splash of water and cover with a lid.

Add about 1/3 cup water and greens, cover and cook until greens are wilted. Length will depend of greens using, anywhere from 1 – 5 minutes.

Add cooked ingredients to blender along with 1 cups water and blend until completely smooth.

Add tapioca starch to 1 tbsp. water and stir to combine.

Return liquid to pan over medium heat and bring to boil, lower heat and add in water and tapioca mix, stir constantly until liquid thickens.
NB: Gravy will thicken as it gets colder, if stored in the fridge just reheat and it will become runnier again.
Perfect Oil Free Roast Potatoes
Serves 4
5 minutes preparation, 25-35 minutes cooking

4 Large Potatoes of choice (choose a good roasting potato e.g. Coliban or Dutch Cream
Method

Preheat oven to very hot. (230-260c/450-500f)

Wash potatoes and cut into desired size. You may wish to peel them if you like.

Place in pot and cover with boiling water , bring to boil and par boil for 5-10 minutes depending on the size of your potatoes. They should be nearly cooked through.

Drain potatoes and let steam dissipate completely.

Line a roasting tray with baking paper and scatter potatoes onto tray. If you have left the skin on, place skin bottom side down so the cut pieces face upwards.

Roast in oven until golden brown. You don’t need to turn them over but you can if you like. I have found that in a very hot oven these take anywhere from 20-30 minutes. Make sure you keep an eye on them, don’t want them to burn!

Remove from oven and enjoy!
NB: Because these are being cooked at very high temperatures I don’t recommend adding herbs to the roasting tray as they will just burn or dry up.
