Apricot & Coconut Bliss Balls

Ingredients

  • 200 grams Dried Apricots

  • 3 Medjool Dates pitted

  • ¼ Cup Dried Shredded Coconut

  • ¼ Cup Rolled Oats

  • 1 tsp. Rice Malt Syrup or preferred liquid sweetener

  • Extra shredded coconut for outside garnish

Method

  1. Put all ingredients into a food processor except the liquid sweetener. Process on high for one minute.

  2. Check stickiness of mixture; if it isn’t holding together add the 1 teaspoon of liquid sweetener.

  3. Roll into balls, I used a tablespoon measurement for mine so they’d be the same size. Roll in extra coconut to lightly coat the outside of balls. They are not overly sticky so you will need to press the coconut into the balls a little bit.

  4. Place in a covered container and chill in fridge for best texture.
