15 min prep, 30 minute cooking time
1 can of butter beans
½ cup of mushrooms chopped into small pieces
½ cup of cooked quinoa
¼ cup capsicum red or green diced
¼ cup chopped walnuts
1-2 garlic cloves
¼ cup diced spring onion
¼ cup chopped coriander
3 tbsp tomato sauce
1 tbsp molasses
1 teaspoon smoked paprika
2-3 tbsp ground linseed
¼ tsp chilli flakes
½ tsp of veggie salt
Mushrooms and cook over dry heat until soft
Mash butter beans and quinoa together
Add the remaining ingredients and combine, let sit for five minutes
Form into 4-5 patties
Place on baking paper on baking tray
Cook at 180C for 15 minutes, turn over and cook for 15 minutes more.
Place on burger bun or toasted sandwich loaf
Top with cashew mayo, tomato, lettuce, avocado and chilli sauce.
Cooking time will definitely depend on your oven and how you like your patties. 15 minutes per side in my oven give a nice crispy outside and soft moist inside.
