Chocolate Babka

Chocolate Babka

10 minute preparation, 20 minute rising, 20 minute cooking time

Makes 1 Babka


Ingredients for dough

  • 1 ½ cups of wholegrain flour

  • ½ tsp cinnamon

  • 1 tsp yeast

  • pinch of salt

  • 1 tbsp. raw brown sugar

  • 1 tbsp. apple sauce

  • 1/3 cup warm soy milk

Ingredients for filling

  • 6 squares of lindt dark chocolate

  • 1/3 cup chopped hazelnuts

  • 1 tbsp. dark brown sugar

Ingredients for top

  • 2 tsp maple syrup



  1. Heat oven to 220°C (430f).

  2. Line a loaf pan with baking paper or use a silicone pan.

  3. In a bowl, combine flour, cinnamon, yeast and salt.

  4. Add apple sauce and soy milk. Stir to combine, then mix with hands.

  5. Kneed gently for about 1 minute.

  6. Cover with moist paper towel and let rise for 10 minutes.

  7. Meanwhile, prepare nuts by chopping them up and melt chocolate in a microwave proof bowl at short intervals until melted. Careful not to burn the chocolate, it may be melted but appear intact, to check the chocolate give it a stir.

  8. Roll out into a rectangle.

  9. Spread chocolate evenly over dough. Sprinkle nuts and dark brown sugar over chocolate. Roll up length ways and then slice down length ways so you get two long pieces. Place the two pieces of dough together carefully in pan and let sit in a warm place for 10 minutes.

  10. Drizzle with maple syrup and bake for 20-25 minutes or until cooked through.
