Condiment 2 Minute Noodles

2 minutes’ preparation, 2 minutes cooking time
Ingredients

1 tbsp. quick cooked veggies finely diced

½ tbsp. spring onions sliced
-
½ tbsp. diced tofu or cooked beans
-
5-6 baby spinach leaves
-
A few herbs of your choice
-
½ tsp. tomato sauce [ketchup]
-
¼ tsp. vinegar
-
½ tsp. soy sauce
-
½ tsp. chili sauce or paste
-
1 serve rice vermicelli
Method

Prep all ingredients first while boiling the kettle.

Into your coffee cup, mug or thermos place all the vegetables and tofu down the bottom followed by the noodles.

Pour over boiling water, cover with either the coffee cup lid or a plate. Let sit for 2 minutes.

For dry noodles, drain water, add condiments and stir.

For soup noodles, remove lid, add condiments and stir.
