French Toast

5 minutes preparation, 5 minutes cooking time
Serves 1 (2 Pieces of Toast)
Ingredients

¼ Cup almond milk

2 slices of wholemeal bread

1 tsp maple syrup

½ tsp vanilla extract
-
½ tsp cinnamon
-
1 tbsp. tapioca starch

Figs or favourite fruit plus extra maple syrup to top (or date sauce)
Method

Mix all the ingredients except the bread in a bowl and whisk together.

Place bread in mixture and press down lightly for 5 seconds each side.

Cook over low-medium in a non-stick pan. Turn when golden brown and cook the other side. Toast should have a thin layer of crunch on the outside and be soft on the inside.

Serve with favourite fruit and a small drizzle of maple syrup. Goes great with a cup of rooibos tea!
