French Toast

5 minutes preparation, 5 minutes cooking time

Serves 1 (2 Pieces of Toast)



  • ¼ Cup almond milk

  • 2 slices of wholemeal bread

  • 1 tsp maple syrup

  • ½ tsp vanilla extract

  • ½ tsp cinnamon

  • 1 tbsp. tapioca starch

  • Figs or favourite fruit plus extra maple syrup to top (or date sauce)



  1. Mix all the ingredients except the bread in a bowl and whisk together.

  2. Place bread in mixture and press down lightly for 5 seconds each side.

  3. Cook over low-medium in a non-stick pan. Turn when golden brown and cook the other side. Toast should have a thin layer of crunch on the outside and be soft on the inside.

  4. Serve with favourite fruit and a small drizzle of maple syrup. Goes great with a cup of rooibos tea!
