Makes 8-10 buns
30 minutes preparation, 1.5 – 2 hours rising/proofing time, 20-25 minutes cooking
Ingredients

3 cups of wholegrain flour

1/2 cup raw sugar

1 tsp cinnamon

½ tsp mixed spice
-
35g packet of yeast
-
½ cup sultanas
-
½ cup currants
-
½ cup raisins
-
½ cup apple sauce
-
Pinch of salt

1 cup warm milk
Cross
-
¼ cup plain white flour
-
2-3 tbsps. water
Glaze
-
1/3 cup hot water
-
2 tbsps. raw brown sugar
Method

In a bowl put flour, yeast, spice, dried fruit and salt. Stir to combine.

Add apple sauce and warm milk. Stir to combine, then mix with hands

Kneed for about 5 minutes.

Cover with plastic wrap and let sit in a warm place for 1 hour or until it double in size.

Separate into 8 portions and knead into buns. Place on baking tray so that they touch each other and cover with plastic wrap. Let sit in a warm place for 30 more minutes or until it doubles in size.

Heat oven to 220c (430f). Prepare a baking tray with baking paper.

To make the batter for the cross blend the flour and water together until you get a smooth paste. Put it into a piping bag and pipe a straight lines down the buns vertically then horizontally.

Cook in oven for 20 minutes or until golden brown and cooked through.

To make glaze bring water and sugar to the boil, stirring occasionally. Boil for 3-4 minutes. Glaze buns when they come out of the oven. Buns can be eaten hot, cold or toasted.
