Muesli Bars

Crunchy & Chewy

Makes 16-18 Bars

15 minutes preparation time 35-40 minutes cooking (or 2 hours refrigeration)

 

Ingredients

  • ½ cup crunchy peanut butter

  • ½ cup golden syrup (or preferred liquid sweetener)

  • ½ tsp. mixed spice

  • 1 ¼ cups rolled oats

  • ¼ cup desiccated coconut

  • 2 Weetabix crushed (or 40 grams of alternative breakfast cereal crushed)

  • ¾ cup of mixed nuts and seeds of your choice

  • ¾ cup of mixed dried fruit of your choice

Method: Crunchy version

  1. Heat oven to 170c/340f. Line a pan with baking paper.

  2. In a saucepan combine peanut butter, golden syrup and mixed spice. Stir occasionally over low heat being careful not to burn until it becomes runny and combined.

  3. Mix the remaining ingredients together in a bowl. Pour over peanut sauce and carefully mix through, I recommend using your hands once you have stirred it through with a spatula or spoon and the mixture has cooled a bit.

  4. Place mixture in lined pan and press down firmly. Cook in oven for 35-40 minutes. Let cool in pan for 30 minutes, then place in refrigerator for 30 minutes before slicing.

  5. Store in an airtight container in pantry for up to a week.

Method: Chewy version

  1. In a saucepan combine peanut butter, golden syrup and mixed spice. Stir occasionally over low heat being careful not to burn until it becomes runny and combined.

  2. Mix the remaining ingredients together in a bowl. Pour over peanut sauce and carefully mix through, I recommend using your hands once you have stirred it through with a spatula or spoon and the mixture has cooled a bit.

  3. Place mixture in lined pan and press down firmly. Place in refrigerator for 2 hours before slicing.

  4. Store in an airtight container in refrigerator for up to a week.
