15 minutes preparation

 

Salad Ingredients

  • 2 oranges (1.5 for salad, 1/2 an orange for dressing)

  • 1/2 fennel

  • 1/2 red onion

  • ¼ cup loosely packed parsley

  • Tops of fennel

 

Dressing Ingredients

  • 1/3 cup orange juice

  • Zest from ½ orange

  • 1 teaspoon mustard

  • 1 tbsp. apple cider vinegar

  • Salt & pepper

  •  

Method

  1. Zest and juice half an orange set aside for dressing. Peel and segment or slice oranges.

  2. Thinly slice fennel & onion, chop up parsley and put into a salad bowl.

  3. For dressing put all ingredients into a jar and shake vigorously until well combined. Taste for adjustments.

  4. Pour dressing over salad and toss gently to combine. Finish with fennel tops. Serve as a side salad with a vegan bbq or as a main for a light dinner.
