Serves 1 person

2 minute preparation, 5-10 minutes cooking time depending on size of eggplant



  • 1 small eggplant

  • 1tsp. balsamic vinegar

  • ½ tsp. mixed dried herbs

  • Optional salt and pepper (I only use pepper)



  1. Wash and dry eggplant, cut in length ways. Score inside so you get diamond shaped cuts.

  2. Place in microwave safe bowl, pour over balsamic vinegar and massage in with hands.

  3. Sprinkle over herbs and optional seasoning, cover and cook in microwave on high for 4-5 minutes. Check to see if it’s tender by putting a knife into the eggplant. It should be soft but not falling apart. Bigger eggplants will longer to cook.

  4. Serve on plate and pour over top the cooking juices.
