25 minutes preparation, 15-20 minutes cooking time for quinoa

Ingredients

2 cups of water

1 cup of quinoa
Salad items

1 red capsicum diced
-
1 cup blanched broccoli
-
½ - 1 small red onion
-
½ cup cooked corn
-
2 tbsp. fresh parsley chopped

½ cup walnuts chopped
-
½ cup pomegranate seeds
Dressing
-
1 clove of garlic
-
1 tsp cumin (ground)
-
2 tsp rice malt syrup
-
1 tbsp. lemon juice
-
1 tsp lemon zest
-
1 tsp Apple Cider Vinegar (raw is best)

½ tsp salt

Pepper to taste
Method

Cook quinoa using packet instructions. Once cooked fluff up and let cool completely. (NB: Personal preference I cook my quinoa for 15 minutes, packet says 30 minutes)

Prepare all salad items, set to one side.

Mix dressing together and combine well. You may need to heat the syrup a little to combine correctly.

Mix the quinoa, salad items and dressing together. Taste and adjust for seasoning. Eat immediately or store covered in fridge. Best eaten fresh!
