10 minute preparation, 10-15 minutes cooking time

Serves 4

 

Soup

Ingredients

  • 2 Pears

  • 420 grms Sweet Potato

  • ½ red onion

  • 1 Stick of celery

  • 1 tsp vegie stock

  • 1 litre water

  • Pinch Salt

  • Pinch Pepper

  • 1 Clove Garlic

  • ½ tsp Cinnamon

  • ½ tsp  Coriander seeds

  • ½ tsp  Cumin seeds

  • 1-2cm knob of ginger

  • ½ tsp tumeric

  • Pinch or two of cayenne chilli pepper

  • 1 tsp apple cider vinegar

 

Method

  1. Chop up vegies into like sized pieces

  2. Put all ingredients except mint and non-dairy milk into a pot and cover with 1 litre of boiling water.

  3. Bring to boil, reduce to simmer and cook for 15 minutes or until vegies are tender.

  4. Either use a blender or a stick mixer to puree soup.

  5. Put into serving bowls, top with optional Macadamia Nut Cream and a sprig of mint.

 

Macadamia Nut, Mint & Garlic Cream

Ingredients

  • 1/4 cup macadamia nuts

  • Handful of mint

  • 1/2 clove of garlic

  • Pinch of salt

  • 1/2 cup water

  • 1 tsp apple cider vinegar

  •  

Method

  1. Put all ingredients into a blender and process until smooth. Taste for balance and enjoy!
