Sweet & Sour Vegetables

Serves 2

15 minutes preparation, 6 minutes cooking time.



  • 140 grams or 2 cups broccoli + leaves if any

  • 1 medium carrot

  • 1 small capsicum/pepper any colour

  • ½ brown or red onion

  • 8 Snow peas or sugar snap peas

  • 1 Cup diced pineapple fresh is best

  • ¼ Cup Bamboo shoots canned

  • 1⁄2 – ¾ cup water

  • 1 Clove of garlic crushed

  • 2 tsp. potato starch

  • 1 tablespoon soy sauce

  • 1 ½  tsp. Apple Cider Vinegar


  1. With any stir fry prepare everything first. Cut broccoli into florets, snow peas into 3 pieces, slice carrots, capsicum and cut onions into wedges. Chop pineapple into small pieces.

  2. Into a small jug pour ¾ cup water and add crushed garlic, soy sauce and vinegar. Add starch and stir to combine.

  3. Put carrots and onions into a skillet, add a few tablespoons of water, cover and steam for 2 minutes.

  4. Add pineapple, broccoli and cook for a further 2 minutes covered. At any time during the steaming process add another tablespoon of water if needed.

  5. Add capsicum, snow peas and bamboo shoots, cook for 1 more minute covered.

  6. Pour starch mixture into the skillet and stir until thickens, this will happen fast, don’t overcook it. Add extra water if you want the sauce thinner. Serve over wholegrain brown rice or noodles.
