Preparation Time Cooking Time

Serves 2

10 minutes preparation time, 4-5 minutes cooking time



  • ½ block firm tofu crumbled

  • 2 spring onion sliced

  • 6 button mushrooms sliced

  • 6 Cherry tomatoes halved

  • 1 Cup chopped adult spinach or baby spinach leaves left whole

  • 1 Tbsp. yeast flakes (optional)

  • ½ tsp garlic powder

  • ½ - 1 tsp turmeric powder

  • Salt & pepper to taste

  • 2 Tbsp. water or veggie stock

  • Fresh parsley or coriander chopped

  • Wholegrain toast or brown rice to serve



  1. Prepare vegetables, heat skillet to medium temperature.

  2. Dry fry onions and mushrooms for 1-2 minutes or until soft.

  3. Add tomatoes and cook for another minute, add a splash of water if ingredients start to stick to pan.

  4. Crumble in tofu, add in seasonings and stir to combine.

  5. Add in water and spinach, cover and cook for one minute or until tofu is heated and spinach is wilted.

  6. Serve immediately over wholegrain toast, dry fried potatoes or brown rice for something a little different.
