Serves 8-10 people

20 minutes preparation time


  • ½ Red Cabbage

  • 1 Red Capsicum

  • 2 Red Apples

  • ¼ Red Onion

  • 1 Carrot

  • Handful parsley


  • 1 Avocado

  • 2-3 Tsps. Apple Cider Vinegar

  • Salt to taste

  • ½ - 3/4 Cup Soy Milk (or alternative)



  1. Remove the hard core from the cabbage and shred it using a large knife; I use a bread knife. Thinly slice capsicum and red onion. Julienne or grate the apples and carrot. Finely chop parsley. Place all the salad ingredients into a bowl. 

  2. For dressing remove pip and skin from avocado and mash. Place all dressing ingredients into a jug and mix thoroughly until combined. You can use a blender if you want a super smooth dressing.

  3. Don’t dress the slaw until you are going to eat it. You can either pour the dressing over the slaw and toss through or serve at the table separately to let guests pour their own dressing on.
