Warm Italian Couscous Salad

Serves 1

Ingredients

  • Small handful of baby spinach or alternate green

  • ¼ cup wholegrain couscous

  • ½ clove garlic or ¼ tsp garlic powder

  • slice or capsicum a.k.a. pepper diced

  • 20 grams [1 ounce] tofu cubed

  • 2 olives sliced

  • ½ tsp. stock powder or seasoning of choice

  • 75 ml [1/3 cup] boiling water

  • ½ small tomato

  • 1 tbsp. Fresh herbs of choice e.g. basil, parsley, oregano or ½ tsp. dried.

  • squeeze of lemon juice

  • Optional salt and pepper

Essential equipment required

  • 1 deep bowl

  • 1 small plate

 

Method

  1. Place spinach in bowl, top with couscous, seasonings, garlic, capsicum, tofu and olives.

  2. Pour over boiling water and cover with plate immediately, let sit for 6 minutes.

  3. Meanwhile dice up your tomato and herbs.

  4. When time is up, remove plate and stir through tomato and herbs. Squeeze over some fresh lemon juice. Taste and adjust seasonings. Eat and enjoy!
