Warm Italian Couscous Salad

Ingredients

Small handful of baby spinach or alternate green

¼ cup wholegrain couscous

½ clove garlic or ¼ tsp garlic powder
-
slice or capsicum a.k.a. pepper diced
-
20 grams [1 ounce] tofu cubed
-
2 olives sliced
-
½ tsp. stock powder or seasoning of choice
-
75 ml [1/3 cup] boiling water
-
½ small tomato
-
1 tbsp. Fresh herbs of choice e.g. basil, parsley, oregano or ½ tsp. dried.

squeeze of lemon juice
-
Optional salt and pepper
Essential equipment required

1 deep bowl
-
1 small plate
Method

Place spinach in bowl, top with couscous, seasonings, garlic, capsicum, tofu and olives.

Pour over boiling water and cover with plate immediately, let sit for 6 minutes.

Meanwhile dice up your tomato and herbs.
-
When time is up, remove plate and stir through tomato and herbs. Squeeze over some fresh lemon juice. Taste and adjust seasonings. Eat and enjoy!
